Yajaira Morphonios
A dedicated construction manager and entrepreneur. Born in Puerto Rico, with a bachelor’s degree in civil engineering.
Yajaira works in several leadership roles in the construction industry, abroad and mainland United States, with accomplishments in both the private and public sectors.
Gamaliel Cardona
Born and raised in Vega Alta, Puerto Rico, Gamaliel is the owner and operator of his own food truck, Mr. G-Pleta. Beyond the culinary world, he is also a dedicated high school teacher and also extends into project management. His ability to juggle these diverse roles reflects his adaptability and drive to make a positive impact in every aspect of his life.
Gabriela Shanklin
Gaby was Born in Ponce, Puerto Rico and moved to Louisville, KY at the age of 10 with her family. She graduated from Northern Kentucky University with a B.S. in Athletic Training in 2015 and became a Board Certified Athletic Trainer. She then graduated from Old Dominion University with a M.S. in Athletic Training in 2017. She practiced professionally as an athletic trainer for 6 years before shifting to a career as an entrepreneur and in the nonprofit sector.
In 2021 Gaby and her husband Tywan launched Lil Shanklin's Donuts, a mobile mini donut shop specializing in custom-made mini donuts. Currently, they function as a pop-up stand serving in community events, farmers markets, corporate events, and catering for private functions.
Luis Suazo Olmo
Born and raised in Guaynabo, Puerto Rico. In 2017 he moved to Louisville Kentucky and started working in Jefferson County Public Schools. Co-owner of Mr. G-Pleta, a Puerto Rican street food truck, and also in 2023 he was named an Honorable Kentucky Colonel by our Governor Andy Beshear. Proud to be a Puerto Rican and part of our Latino community.
